Dane got bit by the bread bug in 2008 after working in the oceanographic community for several years. Learning to bake bread and build wood-fired brick ovens at Sweetwater Baking Company Camphill Kimberton Hills, PA laid the foundation for him to open The Canterbury Bread Shop at Brookford Farm in Canterbury, NH in 2012. Running a micro-scale bread shop with a 6’x8’ wood fired brick oven taught him how people respond to good bread.
Life changes related to family brought him to Ithaca NY in 2016 and he has been looking for his next bread project ever since. A serendipitous conversation betweens dads at an Ithaca Waldorf School event in December of 2023 connected him with the landlord of Press Bay Court and they got to talking, which led to the formation of Woodpepper, LLC and the creation of a soon-to-be high quality bread shop at 110 W Green St. in the Press Bay neighborhood.
We will be a naturally leavened, organic bread shop producing loaves that have our own character due to the methods and intentions we bring to our bread making process. We will focus on making breads from high extraction and wholemeal type flours and utilizing more sifted flour where it makes sense for us. Almost all of our breads will be leavened with a starter culture and hydrated fully to help aid in better digestion (I’m trending towards a poolish baguette). Most importantly, there is an emphasis on creating breads that we like to each and that the community responds to.
